Any leftover syrup you can use for brunch beverages, sweets, or to mix another batch of bikinis.

The Bikini Cocktail

Yields 10 servings

To make the Clementine Cordial (makes 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar

To make the Drink (makes 850ml, enough for 10)

400ml decent vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (see above)
A few cranberries, to garnish
Mandarin essential oil, for finishing

Instructions

To prepare the Syrup: Place all the components in a pot, bring to a simmer, stirring so the sugar melts. After that, remove from the stove allowing it to cool down completely. Decant into an sterilised bottle, close it keeping it in the refrigerator, where it will keep for up to one month.

To make Cocktail Base: Pour the specified liquid ingredients into a big jug, allow it to infuse for 60 minutes, then filter it best through cheesecloth, so it's fully clarified.

For serving: Pour 85ml from the cocktail base into a stirring glass containing ice, and agitate carefully for about 60 seconds to cool it down. Pour to a cold coupe glass or similar, decorate with some cranberries adding the final touch by giving it a light spray of mandarin oil over the drink.
